Fruit & Nut Bars - Shelley's

¼ cup raw Pepitas seeds
1/3 cup raw Sesame seeds
1/3 cup raw Almond slivers
1/3 cup raw Pecan pieces
½ cup Thompson raisins
¼ cup Craisins
¼ cup Dried apricots (or papaya)
1/3 cup Cooking dates
1/3 cup Dried apples
2 cups All Bran honey flakes (or rolled oats)
1/3 cup All Bran buds (can skip if you like)
¾ cup Honey
1/3 cup Brown Sugar
½ cup Almond Hazelnut butter
1 tsp Vanilla
1 tsp Cinnamon
½ tsp ea. ground Nutmeg, Allspice, Clove

Spray frying pan or baking sheet with canola oil and toast nuts and seeds lightly.
Cut larger fruits (apricots, dates, apples) into smaller pieces.
Combine fruit, toasted nuts/seeds and cereal in a large bowl.

In non-stick pan, over low heat, add vanilla, spices, honey and brown sugar and bring to a boil for 1 minute (**very important as this is what makes it sticky enough to hold everything together**) remove from heat, stir in nut butter quickly then pour into dry mixture immediately. Mix thoroughly, press into parchment lined 9x13 baking pan and let cool in freezer for at least an hour. Cut into bars while frozen (approx 16) and return to pan or individually wrap for quick snack. Store in fridge or freezer until ready to enjoy.
